Paleo Collagen Pumpkin Bread
This recipe is not just Paleo but also Keto so it's Flourless meaning grain-free and gluten-free. It's unsweetened no sugar added, It's easy to make a one-bowl recipe, the texture is moist, not dry and it's very customizable, great with various mix-ins and flavorings/spices. This recipe makes a loaf with 6 slices the serving size is 2 slices.
- 3 Scoops Collagen
- 3 Large Eggs
- ½ Cup Pumpkin puree
- ½ Cup Almond butter (unsalted, unsweetened)
- 1 Tsp Baking Soda
- 1 Tsp Cinnamon
- ½ Tsp Pumpkin Pie Spice
- ¼ Tsp Pink Salt
- 1 Tsp Vanilla Extract (optional)
STEP BY STEP
Preheat oven to 350 degrees F.
Use a mixing bowl, combine all ingredients. Mix well.
Pour batter into a lined 8" x 4" baking pan and bake for 35 minutes.
Let cool, then transfer to wire cooling rack and enjoy!
Store in fridge up to one week.
