Collagen Banana Bread
Now you can add the Health benefits of collagen to your classic banana bread recipe. This recipe is packed with protein and low carbs, it is naturally sweetened with bananas and a hint of stevia which is optional. This Collagen Banana Bread makes a loaf with 10 slices and the serving size is 1 slice.
- 2 Scoops Collagen
- 1 Cup White Whole Wheat Flour
- 1 Tsp Baking Powder
- 1/4 Tsp Baking Soda
- 2 Large Eggs
- 1 Tsp Cinnamon
- 3 Ripe Bananas, mashed, a little over 1 cup mashed
- 1 Tsp Vanilla extract
- 2 Tbs Coconut oil, melted
- 3 Tbs Stevia
STEP BY STEP
Preheat oven to 350 degrees.
Mix together flour, collagen, cinnamon, baking powder/soda, stevia, and salt in a mixing bowl.
Mash/ blend bananas, coconut oil, eggs and vanilla in a food processor until smooth.
In the large bowl, combine and mix dry ingredients with processed blend and mix into a dough.
Use melted butter or cooking spry to coat 8.5" x 4.5" loaf pan OR two mini 5.75" x 3” loaf pans. You can use parchment paper as well to prevent sticking.
Pour dough into pan. Bake for 40-50 minutes or until browned. Use a fork to check.
Let cool then remove from the pan. Then serve and enjoy.
